How can I reignite things?

Alright, my girlfriend and I have been dating for nearly eleven months now. In the beginning, she was all over me all of the time, but when school ended, she got a job, and now she's preparing for college, plus she's got to take care of her horses. Naturally I'm kind of taking a backseat lately, which is fine, I understand she's got priorities, but what is some thing(s) I can to that will totally sweep her off her feet and make her infatuated with me, if just for a day. Just something I can do to completely shatter her world (in a good way). Any ideas? Thank you!
